Hey guys! Today I wanted to share a quick and filling snack! I love making bliss balls for on the go, since they are packed full of healthy fats and protein to pick me up in the middle of my day and satisfy my sweet tooth! White chocolate cranberry has always been a favorite flavor of mine, so I wanted to recreate the same taste in a healthier way! And as I am already knee deep in the Christmas spirit, I figured why not, these are perfect! I’d love to hear if you try these and if you have any ideas for what flavors I should do next time!
- 1/4 cup raw macadamia nuts
- 1/4 cup blanched almond flour
- 2 tbsp shredded coconut
- 1 scoop vital proteins collagen peptides
- 2 large dates
- 2 tbsp raw cashew butter
- 1 tsp vanilla extract
- 2 tbsp rolled oats
- 2 tbsp cranberries
- 3 tbsp desiccated coconut to top with
In a food processor pulse together the macadamia nuts, almond flour, coconut, and collagen until the macadamia nuts are broken in to small pieces.
In a small bowl pour hot water over two pitted dates and let soak a few minutes until their outer skin peels away easily, discard the skin and water from the bowl and add the cashew butter and vanilla. Mash everything together with a fork until a smooth paste forms with no chunks of dates left.
Add the almond flour mixture and use a spatula to incorporate everything together. Then add in the rolled oats and continue mixing until everything is thoroughly combined.
Soak the cranberries for a few minutes and then drain. Add in the cranberries to the mixture and fold together
To assemble the balls take about 2 tsp of dough and roll it in your palm to create the bliss balls, then roll in desiccated coconut and dust off any extra.
