Happy Halloween friends! Can you believe we have two months left of 2017, I swear this year flew by so quickly! I’m so excited for the holiday season and I’ve already started listening to Christmas music, as well as bought Lindt’s seasonal peppermint truffles #don’tjudge. One of my favorite flavor combinations is chocolate peppermint! Smoothies, cupcakes, milkshakes, you name it, I’ll eat it! So I am really excited to be able to share some of my favorite holiday recipes with y’all this year! I’m also thinking about doing blogmas, where I post every day for 25 days in December! I know it won’t be easy, but tis’ the season, am I right?
I feel like I haven’t caught up with you guys in a hot minute so I want to start off by talking about some of the things I’ve been loving this month. First off, Podcasts. I’ve never really been a podcast person, I’ve heard people rave about them, but never really thought I’d enjoy them. Recently I started getting bored with just listening to music, and my sister recommended “How I Built This” with Guy Raz on NPR! And y’all let me just say, It’s so inspiring, as well as interesting! It interviews entrepreneurs who started companies such as Kate spade, Kendra Scott, Stony Field, Chipotle, and many more (those are just a few of my favorites)! I love listening to them when I’m getting ready in the morning, as I feel it helps to wake me up! Secondly I’ve been obsessed with Siggi’s yogurt! My favorites are the 4% vanilla and triple cream chocolate! I’ve always been a fan of their yogurts, because they are low in sugar, high in protein, use grass fed milk, and are overall such a wonderful brand! And I feel like this month I rediscovered my love for their yogurt! I also love how the vanilla flavors are sweetened with Agave instead of cane sugar! And finally oatmeal has been a staple for me! As we’re approaching the colder months, I normally wake up craving something a bit heavier and warm. So recently I’ve been trading in my omelets and avocado toast for oats! Overnight oats are super convenient for me, since I can prep them the night before and eat them on the way to school! These carrot cake oats are packed with lots of vitamin c and healthy fats to keep you fuller for longer, perfect for a good start to your morning! Feeling like you want a bit more protein? Just add in a scoop of your favorite protein powder! This recipe is so simple and absolutely delicious!
Cinnamon, carrots, and raisins meet to make this delicious carrot cake overnight oats. Packed with vitamin C, and healthy fats, perfect for busy mornings!
- 1 cup rolled oats
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- pinch of salt
- 1/4 tsp allspice
- 1 tbsp chia seeds
- 1/4 cup raisins
- 1-1/4 cups cashew milk or nut milk of your choice
- 2 tbsp coconut yogurt
- 1 tsp pure vanilla extract
- 1-1/2 tbsp maple syrup or to taste
- 1/2 cup finely shredded carrot
Combine the oats, cinnamon, ginger, salt, allspice, chia seeds and raisins in a medium bowl and set aside.
In a separate bowl combine the nut milk, coconut yogurt, vanilla extract, maple syrup and carrot.
Fold together the wet and dry ingredients and distribute between two mason jars with lids, or cover with plastic wrap. Allow the oats the rest in the fridge overnight.
Top with more raisins, cinnamon, and nuts and enjoy!
Feel free to add in your favorite protein powder for a boost of protein! Want more healthy fats? Add a tablespoon of coconut cream!
